Pavesi Forni Modena offers you a line of hybrid ovens, which can be used with either wood or gas, for a perfect combination of tradition and technology. The flat vault PVP line is specially designed to achievevery high reactivity while retaining maximum heat even in large ovens.

This series of ovens, made with a rotating monoblock hearth made of refractory material – for perfectly even cooking – is specially designed to cope with intensive workflows in locations with many guests to serve. Like all other Pavesi ovens, they are completely handmade in Italy: this gives us complete control over production, which we can make completely customized.

When to choose PVP combination ovens

First of all, the choice of a combination oven can bring many advantages, especially in terms of ease of use, reduced consumption and the preservation of the traditional taste of a wood-fired oven. In particular, PVP ovens are large ovens, designed for clubs, pizzerias and restaurants that deal with intensive work (even for many hours) without ever dropping in productivity.

The flat vault and high-density refractory concrete walls enable high thermal reactivity and consistent temperature retention. Combined with the monoblock hearth, this ensures even and perfect cooking results. The hearth is also rotating, with an adjustable rotation speed to suit the operator’s preferences, ensuring maximum ease when handling dough and preparing pizzas.
